Saffron - Originated in Persia and known to King Solomon. Yellow-orange stigmas from a small purple crocus, and the most expensive spice in the world. It takes 250,000 flowers to produce a pound of saffron. Never used the ungrounded threads.

Sumac - Dark purple-red berries of a decorative bush - Rhus coriaria that grows wild throughout the Middle East and produces a fruity, astringent taste. Berries are dried and crushed to a powder

Zerreshk - Barberries, a small pink tart, high in malic and citric acids. Too sour to be eaten raw
